Chef-proprietors, Melanie and Colin Dawson had owned The Talkhouse, a gastropub near Newtown, and were planning to semi-retire to France and open up a restaurant with rooms. Having travelled from Brittany to Provence looking for the sweet spot they came back disappointed by the quality of the local produce, knowing they could get everything they wanted in Wales. The Welsh Black beef and lamb seen grazing along the local River Wye are a staple on a menu that includes sautéed monkfish with braised oxtail in red wine and game terrine with black pudding, quail egg and celeriac remoulade.
The Drawing Room, a restaurant with three bedrooms, is a Georgian house and the decor is sophisticated but not minimal with swish bathrooms.
