1 tbsp vegetable oil

3-4 tbsp Thai red curry paste

400ml canned coconut milk

200ml vegetable stock or water

2 tbsp tamarind paste (such as Bart)

½ tsp salt

2 tsp sugar

1 red pepper, deseeded and sliced

1 yellow pepper, deseeded and sliced

2 small aubergines, chopped

1 red chilli, finely sliced

2 courgettes, sliced

100g green beans, trimmed

200g small new potatoes, cooked

10 cherry tomatoes

2 tbsp basil leaves

Heat the oil in a large pan and fry the curry paste over a gentle heat for 2 minutes, stirring constantly until fragrant. Stir in the coconut milk, stock or water, tamarind paste, salt and sugar.

Add the peppers, aubergines and chilli, and cook for 10 minutes.

Add the courgettes, beans, cooked potatoes and cherry tomatoes, and simmer for a further 10 minutes, until tender. The taste should be hot, sweet and lightly sour. Garnish with the basil leaves and serve with steamed rice.
